Recipe: Kasha Varnishkes (Buckwheat Groats with Pasta)

Ingredients:
- 1 cup buckwheat groats
- 2 cups water
- 1/2 teaspoon salt
- 1 cup pasta (such as penne or farfalle)
- 2 tablespoons butter or clarified butter
- Fresh herbs (such as dill or parsley), for garnish
- Plain yogurt, for serving

Instructions:
1. Rinse the buckwheat groats under cold water to remove any impurities.
2. In a saucepan, bring 2 cups of water to a boil. Add the rinsed buckwheat groats and salt to the boiling water.
3. Reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes or until the buckwheat groats are tender and the water is absorbed. Remove from heat and let it rest for a few minutes.
4. While the buckwheat is cooking, cook the pasta according to the package instructions until al dente. Drain the pasta.
5. In a separate pan, melt the butter or clarified butter over medium heat.
6. Add the cooked buckwheat groats and pasta to the pan with the melted butter. Stir well to combine and heat through for a few minutes.
7. Remove from heat and garnish with fresh herbs.
8. Serve the Kasha Varnishkes warm with a dollop of plain yogurt on top.

Kasha Varnishkes is a traditional Russian dish that combines hearty buckwheat groats with pasta. It is a flavorful and satisfying dish, perfect for a comforting meal. The addition of yogurt on top adds a creamy element. Enjoy!

You can always add sautéed vegetables like bell peppers or carrots if desired.
