Ekadashi Recipe: Potato Vareniki (Russian Potato Dumplings)

Dough Ingredients:

  • 2 cups buckwheat flour /Kuttu Aata
  • 1/2 teaspoon salt
  • 1 cup plain yogurt
  • 1/2 cup water
  • Butter or clarified butter for cooking

Filling Ingredients:

  • 2 cups boiled potatoes, mashed
  • 1/4 cup yogurt
  • Salt to taste
  • Fresh herbs (optional), finely chopped (such as dill or parsley)

Instructions:

  1. In a mixing bowl, combine the buckwheat flour and salt for the dough.
  2. Add the yogurt and water to the dry ingredients and mix well until you have a smooth dough. If needed, you can adjust the consistency by adding more water or yogurt.
  3. Let the dough rest for about 15 minutes to allow it to become more pliable.
  4. In a separate bowl, combine the mashed potatoes, yogurt, salt, and fresh herbs (if using). Mix well to create a smooth potato filling.
  5. On a lightly floured surface, roll out the dough into a thin sheet, about 1/8 inch thick.
  6. Use a round cookie cutter or glass to cut out circles from the dough. The size can vary depending on your preference.
  7. Place a small spoonful of the potato filling in the center of each dough circle.
  8. Fold the dough in half, enclosing the filling, and pinch the edges together to seal the dumplings. You can also use a fork to press the edges together for a decorative pattern.
  9. Bring a large pot of water to a boil. Add a pinch of salt to the boiling water.
  10. Carefully drop the vareniki into the boiling water and cook for about 3-5 minutes, or until they float to the surface.
  11. Remove the cooked vareniki from the water using a slotted spoon and transfer them to a serving plate.
  12. Drizzle melted butter or clarified butter over the vareniki to prevent them from sticking together.
  13. Serve the potato vareniki warm with a dollop of yogurt on top, and garnish with fresh herbs if desired.
