Dry roasted, not fried, green coriander paratha or Dhaniya paratha is a healthy breakfast dish in North India.  Helps keep the kidneys in good condition. Winter herbs light up the kitchen and give us many many micronutrients.
Green coriander is blended with water in a food processor and this liquid is used to knead wheat or barley flour dough to make breakfast Parathas, that go well with fresh dahi, yogurt or pickle or homemade butter. 

The paratha is cooked on an iron tawa or griddle. It is pressed with a spatula to cook it well. No oil or ghee is used and it is dry roasted.
