Sev Poha Recipe

Ingredients:

  • 2 cups thick Poha (flattened rice)
  • 1/4 cup roasted peanuts
  • 1/4 cup fresh grated coconut
  • 2-3 green chilies, finely chopped (adjust to your spice preference)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida (hing)
  • 2-3 tablespoons oil (you can use any cooking oil like peanut, sunflower, or vegetable oil)
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Sev (thin crispy chickpea noodles) for topping

Instructions:

  1. Wash the Poha:

    • Place the Poha in a sieve or colander.
    • Gently rinse it under running water for about 15-20 seconds or until they become soft.
    • Be careful not to over-soak or over-rinse, as Poha can become mushy.
  2. Drain Excess Water:

    • Allow the excess water to drain from the Poha.
    • Set it aside to let it fluff up.
  3. Roast the Peanuts:

    • In a pan, dry roast the peanuts until they become crispy and golden brown.
    • Remove them from the pan, allow them to cool, and then coarsely crush them.
  4. Prepare the Seasoning:

    • In the same pan, heat the oil over medium heat.
    • Add mustard seeds and cumin seeds. Let them splutter.
    • Add asafoetida (hing) and green chilies. Sauté for a minute.
  5. Add Poha and Spices:

    • Add the drained Poha to the pan.
    • Sprinkle turmeric powder and salt over the Poha.
    • Mix everything gently to coat the Poha evenly with the turmeric and the seasoning.
    • Cook for about 5-7 minutes on low heat, stirring occasionally. This allows the Poha to absorb the flavors and become slightly crispy.
  6. Add Peanuts and Coconut:

    • Once the Poha is cooked, add the roasted peanuts and grated coconut.
    • Mix well and cook for an additional 2-3 minutes.
  7. Garnish and Serve:

    • Turn off the heat and garnish with fresh cilantro leaves.
    • Serve Sev Poha hot, topping each serving with a generous amount of Sev.

Enjoy your homemade Sev Poha, a flavorful and satisfying breakfast or snack option!
