- 2 cups thick Poha (flattened rice)

- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- A pinch of asafoetida (hing)
- 2-3 tablespoons oil (you can use any cooking oil like peanut, sunflower, or vegetable oil)
- Salt to taste
- Fresh cilantro leaves for garnish
- Sev (thin crispy chickpea noodles) for topping
Wash the Poha:
- Place the Poha in a sieve or colander.
- Gently rinse it under running water for about 15-20 seconds or until they become soft.
- Be careful not to over-soak or over-rinse, as Poha can become mushy.
Drain Excess Water:
- Allow the excess water to drain from the Poha.
- Set it aside to let it fluff up.
Roast the Peanuts:
- In a pan, dry roast the peanuts until they become crispy and golden brown.
- Remove them from the pan, allow them to cool, and then coarsely crush them.
Prepare the Seasoning:
- In the same pan, heat the oil over medium heat.
