Sweet and sour brinjal from Awadhi Cuisine
अवधी खट्टे मीठे बैंगन with roti for breakfast
The recipe is very simple! Steam or boil eggplant, and mash it.
In a pan, heat a little oil, add a pinch of kalaunji, a red whole chilly, a pinch each of jeera and grated ginger. Cook till the jeera pops and ginger cooks a bit.
Add brinjal, with a little salt, lots of jaggery and some tamarind paste or amchoor powder.
Cook well and finish it with a pinch of garam masala!
It is ready to eat with roti, rice, toast or layered in Lasagna!
