Amla is a super food that helps in build collagen and helps in anti-aging. It is a staple in the age-old Ayurvedic dessert Chyawanprash. Almonds, especially the Mamra variety have long been a part of every Indian traveller’s favourite take along food.  Several indigenous recipes exist in Indian kitchens. Sharing a particularly delicious and nutritious one here. This one has a shelf life of two weeks, making it perfect for the cook ahead menu.

आमले और बादाम का यह लड्डू एक पारंपरिक भारतीय मिठाई है, जो कि 2 हफ्ते तक खाने योग्य रहती है| इसका उपयोग तीर्थ यात्रा या व्यापार हेतु यात्रा इत्यादि में विशेषकर लाभकारी जान पड़ता था| आज के समय में जब समय का अभाव जान पड़ता है तो किसी छुट्टी के दिन इसे बना कर रखने से परिवार के स्वास्थ्य के लिए पोषक मिठाई घर मे ही तैयार मिल जाती है| भगवान के भोग और प्रसाद में भी यह बहुत उपयोगी है|

आंवले को धो कर भाप में पका ले| क्द्दूकस से बारीक लच्छे कर ले| जितनी मात्रा में आंवले हैं, लगभग उतनी ही ताड़ मिश्री या गुड़ और  ज़रा सा देसी घी या नारियल तेल  मिलाकर धीमी आंच पर पकाएं| जब मिश्रण सूखा सा लगे, तो उसमें थोड़ा बादाम का पावडर और छोटी इलायची पावडर मिलाकर एक मिनट और पाकाये| थोड़ा ठंडा होने पर हाथों से गोल गोल लड्डू बना कर खाए|

  • Cook Time: 30 Minutes
  • Yield: Serves 10 person.
  • Nutrition Facts: Amla is rich in Vitamin C, Vitamin A, Vitamin E, B Complex, Calcium, Magnesium, Manganese, Iron, Potassium, Zinc, Selenium, Sodium, and Omega 3 and 6 fatty acids.

Ingredients:

  • 2 cups grated and steamed Amla fruit
  • 2 cups Palm candy or rock candy or raw cane sugar also known as Boora.
  • 2 tablespoons Almond powder
  • 2 green cardamoms’ seeds powdered
  • 1 teaspoon cold pressed Coconut oil (or clarified butter or ghee if you are not on a vegan diet)

Instructions:

In a skillet or heavy-bottomed steel pan add all the ingredients except almond powder and cook on a low flame. Keep stirring to keep the melting sugar from browning. Cook till it looks glossy and dry enough to roll into a ball or laddoo. Add the almond powder and cook for a minute. Switch off the heat. Allow it to cool till it is cool enough to roll into balls using both palms. Enjoy on a family trip:)
